Happy Spring! The warm sunshine has felt so good to take evening walks and buds are popping up everywhere! As the warm nights continue- grilling is always a great option.

Shrimp, fish, grass fed burgers and chicken all are perfect and can be grilled at the same time for easy meal prep. Planning ahead and getting things grilled and stacked in the fridge makes for easy meal prep during the week. Veggies like zucchini and squash are awesome as well as peppers, onions and mushrooms. All can be made ahead and enjoyed through the week. At our house, we also love grilling whole okra. It’s full of fiber and nice for a change, okra is sturdy enough to withstand the grill. So much variety to choose from as we move into summer!

Here’s a great marinade for chicken and fish that tastes great and has a nice little kick!

Grilling Marinade

    • 3 TBSP Apple Cider Vinegar
    • 1 TBSP Dijon Mustard
    • 1 tsp dried dill
    • ½ tsp crushed red pepper
    • Salt and Pepper to taste

If rebooting, this is great for Monday-Thursday. Add 2 TBSP of olive oil for a weekend for a little extra fat.
